Hemp nut rusk as a power biscuit
Quick and easy to prepare, crunchy and ideal as a source of energy: hemp nut rusks have it all. What's more, the delicious creation fits perfectly into Christmas baking and is usually out of stock in record time.
The perfect snack for on the go, but goes just as well with coffee or as a nibble in everyday life.
Overview
You can also bake hemp nut rusks with other nuts and seeds. Almonds and hazelnuts are particularly suitable. Sultanas can also be replaced with cranberries.
The rusk recipe is not vegan and contains gluten, but you can optionally replace the spelt flour in the recipe with a gluten-free alternative. For example, buckwheat flour is suitable.
Ingredients for 1 tray Hemp Nut Rusk
- 140 g cane sugar
- 3 eggs
- 140 g spelt flour
- 40 g Hemp Protein High Fiber
- 250 g walnuts whole
- 50 g Hemp seeds unhulled
- 150 g sultanas
Preparation time: 30 minutes
Baking time: 30 minutes

- First beat the sugar and eggs until frothy.
- Mix the hemp protein and flour in a bowl and fold in the egg and sugar mixture.
- Add the nuts, sultanas and hemp seeds and stir.
- Spread the mixture on a greased tray and bake for 20 minutes at 180° C.
- Then remove, cut into slices about 1 cm wide and 3 cm long and place on a second tray if necessary.
- Then bake for another 10 minutes at 120° C.
