The hemp noodle dish from champions for champions
Hemp carbonara is the absolute favourite dish of professional skier Daniel Meier. The recipe offers everything a competitive athlete like Daniel expects from a good meal:

The recipe uses the Hemp original spelt pasta is vegan and more digestible than other conventional pasta. Spelt is one of the most valuable grains and is therefore easier to digest than highly cultivated wheat. The nutty Hemp Seeds in the dish provide high-quality protein and healthy omega fats. In addition, herbs such as basil add an intense flavour and bring valuable essential oils to the creation.

If you need more protein, you can also add feta cheese - this gives the hemp carbonara even more protein than a meat dish.
- 360g Organic Spelt Hemp Spirals or Ribbon noodles
- 100g Organic Hemp Seed Premium
- ½ bunch fresh basil
- ½ bunch fresh parsley
- Salt, pepper
- 100g feta cheese (optional)
You will also need a blender to prepare the sauce.
Preparation: 10 minutes

- Bring water to the boil in a high saucepan
- As soon as the water boils, add 1 tsp salt and the pasta
- After 2-3 minutes, skim off a little pasta water and blend with herbs, seeds, salt and pepper in a stand mixer until creamy.
- Strain the pasta after 5 minutes of cooking and mix with the sauce. If the sauce is too firm, just add some more pasta water.
Tip from Daniel: Instead of basil and parsley, you can also use your favourite herbs, spice mixes or sauces. This way, Daniel never gets bored, even if pasta is served at least three times a week.
